Triangular packed rice. Often with a filling, sometimes plain with salt. The trick is to use the right amount of rice vinegar.

The rice treats are called onigiri, basically using a sushi rice recipe and pressed into a shape with something tasty in the middle.

Most likely a syrup made with rice vinegar, sugar and salt. It’s usually made for sushi rice so that’s my best bet!

The green "stuff" you are referring to is Furikake. You can buy it online or ain't the International section of a grocery store.

The other easy way is to use plastic wrap and mold by hand. Otherwise I would suggest making the mold out of nonstick/wet aluminum foil
