Half of a brisket. Trimmed, salted, saran wrapped for a day. Cooked faster than expected so I wrapped it tightly in foil, then towels and put it in the cooler until dinner time. It melted it was so tender. Vincent Vega would have said, "that's a pretty fucking good brisket." 275 on an electric smoker with cherry wood.

Love brisket, looks like I'm taking a trip to the butcher. Thank @OP
