55% pollished yamada nishiki rice with Shizuoka yeast new-5. about 1300 yen. This Junmai ginjo is heavily washed to control the strong flavor of the rice.

Tasting note

Clear clean appearance, on the nose there is a ripe citrus tone of lemon and lime. The aromatics are delightful in their simplicity. The taste is similar to the smell with clear lime notes and softer orange peel and sweet umami finish. A constrained richness permeates the taste making this incredibly drinkable. Nothing is out of balance, and the finish is mild and long. A crisp acidity helps tie it all together. If you told me it was a daiginjo I wouldn't question it.

Tasted cold with roasted vegetables and boiled pork belly. Fantastic. Great value sake.
