It's a mix between 2 "typical Dutch" things. A "waterfiets Speciaal" is Fries with 2 fried snacks (frikandel), mayonnaise, curry ketchup and chopped onions. Mixed with a "kapsalon" which is fries with a layer of Dürum or shoarma, a layer of salad (lettuce, tomatoes, onion, olives, feta, jalapeños), sauce (garlic sauce and sambal) and then a layer of cheese put under a grill.
