8 lbs of London broil I found on sale. Really, any lean cut of beef will work.

My cooking buddy Moe loves the trimmings.

Step one is remove as much fat as possible and cut into manageable chunks. It helps to throw it in the freezer for an hour, it helps the meat stay firm while cutting.

Heavy breathing from the edge of the counter.

Step 2, slice into chunks cross grain.

Results of said cutting.

Add spices. Fresh ground pepper, garlic salt, and cayenne pepper mostly.

Piled together and massaged to set the dry rub. Due to a banana shortage I used a beer for scale.

Yes I drink Rolling Rock. It's my working beer because it still tastes like beer, but it doesn't get me drunk when I'm working.

It's also moe's favorite.

Step 3. Ziploc bags and a marinade.

I usually let it soak for 24 hours. Moe approves.

Step 4. Lay out on drying racks.

Step 5. Dry for 12 to 18 hours depending on thickness of the pieces.

Allow to cool and then bag it.

You can also use your oven. Spray the oven racks with pam, tinfoil the bottom of the oven for easy cleanup. Meat directly on racks 170 12hrs

Oh yeah, leave oven door cracked open a little for circulation. I use a tinfoil ball to wedge in the door.

they are good cats, but can be a pain to care for, combing and trimming their hair is the main thing though.
