I chef well - a collection of my recent creations

5 chili spiced Asian eggplant battered in tapioca starch and Flor then and fried. Topped with a marinated onion blend of pureed avocados, lime juice, kaffir lime leaves, and Thai chilies.

Parmesan, mushroom, spinach, and herbed risotto topped with a spicy cream cheese and bacon herbed stuffed mushroom.

Simple fried tofu tossed in teriyaki sauce.

Balsamic vinegar marinated chicken with a Harissa tomato sauce over a bed of linguine and Par roasted vegetables.

Smoked pork loin on a bed of pureed parsnip and cauliflower. Topped with fire roasted carrots, bok choy, and chicken Jus.

Smoked poussin on a bed of fondant fingerling potatoes tossed with a mild citrus wilted arugula.

Chocolate cake with a chocolate mousse, and chocolate whip with strawberries, and raspberry sauce.

A bed of mushroom risotto topped with a smoked duck leg, and a medley of root vegetables with a duck jus and fig reduction.

Pineapple upside down cake with marcona almonds and almond ice cream paired with a pineapple, and strawberry puree.

Deconstructed spinach and artichoke dip topped with shaved salt-cured duck eggs.

Chocolate, raspberry, and Chantilly cream cake with a swirl of dark chocolate and pistachios.

The judging portion of the culinary competition I work for in Atlanta called "Team building with taste" (insert Shameless plug). Imagine all culinary competitions rolled into one and it's our job to make sure that the judges are wowed by the contestants creations.
I love my job more than you would ever believe..... I'm also a full-time working Chef, Brewer, and fermenter.
