Vanilla Cupcake Recipe

So sick of seeing "cake" recipes that use duncan hines cake mix. Its really not that hard to do it straight from scratch ... so heres a couple recipes to get you started.

1 1/4 cups cake flour 
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
3/4 cup sugar
1 1/2 tsp pure vanilla extract
1/2 cup canola oil
1/2 cup buttermilk (or milk with 1/2 tsp vinegar/lemon juice)

1. Mix dry ingredients together (four, bp, bs, salt)
2. In a separate bowl whisk eggs and sugar, 30 seconds.
3. Add vanilla, oil, buttermilk, whisk 45 seconds.
4. Mix in dry ingredients. Whisk until no streaks and emulsified, shouldn't take longer than a minute.
5. Pour 3/4 full into liners (makes 12 reg or 24 mini)
6. Bake @350F for 12-14 mins.
7. Cool then decorate.

Easiest recipe I have and its so damn moist and delicious. I did a variant with an extra tsp of vanilla, 1 tsp cinnamon, 1/4 tsp nutmeg, and 1/4 tsp ginger for a spiced vanilla cupcake and it was amazing.

Vanilla Sponge Cake

This is literally  a two stage sponge cake. Really easy.

5 eggs
2 1/4 cup sugar
1/2 tsp salt
1tsp vanilla
2 cups flour
4 tbsp. oil

1. Eggs, sugar, salt, vanilla  in one bowl over a double boiler (pot of boiling water), whisk until the eggs are just warm.
2. Whisk the eggs in a stand mixer until they are firm enough to swipe your finger through and leave an indentation.
3. Fold in flour.
4. Fold in oil.
5. Pour into two 9inch pans. Bake @375F for 15-20 mins, until set in the center and slightly golden.
6. Cool cut and decorate.

Layering

Just an additional note, sponge cake is dry so when layering you need to soak in a simple syrup (equal parts sugar and water brought to a boil and cooled). Just take a brush and brush the liquid over the cake. Be generous as this cake will suck it up like a ... well you know.

Your cake will also have a better texture if you sift your flour before measuring and then sift in your dry ingredients.

Love this! Would you recommend the simple syrup before or after cutting? What if you're carving? Still necessary or would it be too wet?

Always after cutting because it will tear easily when wet ... as for carving I tend to go with a sturdier cake... like the first recipe

its honestly all about practice ... I sucked so bad before ... but then I worked in a bakery that just did cakes and cupcakes
