I'd be rather concerned about the meat in contact with the egg being undercooked.
The egg holds the sausage together so it doesn't go everywhere and the extended cooking time makes it food safe. The egg gets a little overcooked but the alternative is a less cohesive biscuit.
I have, it depends on the type of sausage. And I would assume that the person making this food professionally knows the best way to do it, rather than a bunch of commenters. These processes are usually born of trial and error and the best method sticks.
