@OP Next time, try a coarser grind of salt and pepper. Makes a world of difference when cooking the steaks!

What I like to do is a dry rub of spices with a but of spicy pepper overnight wrapped tightly in saran wrap. Capsaicin helps break it down.

I don't own a grill (apartment complex) but pan sear in cast iron for a few minutes on each side, wrap in aluminium, and broil for 5-10 min
