Less sadness, more cinnamon rolls! (With recipe)

I've seen all your weird looking American cinnamon rolls so here's some Swedish ones!
Lots of shit going on i my family and in the family of a close friend (deaths, injury, cancer and mental health issues). We're kinda keeping on top of it but it's still hard to deal with. Today i decided to not focus on being sad and instead make a batch of cinnamon rolls. I'll make sure my friend gets most of them to cheer her up a bit.

Recipe below:

So you'll need:
For the dough
150 g butter
5 deciliters of milk
50 g yeast (preferably for sweet doughs)
1½ deciliters of sugar
1 tablespoon cinnamon (approximately, I never measure this)
1-1½ liters of flour (same as above, I never measure)

For the filling
100 g butter (soft but not melted)
1 deciliter sugar
1 tablespoon cinnamon (and surprise, I don't measure this either)

Finishing off with
1 egg
Nib sugar (according to Wikipedia this is the translation, "pearl sugar" in Swedish)

We'll start off with the dough:
Crumble the yeast in a bowl (I would recommend it to be bigger than mine, you'll see why later...)

melt the butter

and add the milk. Heat/cool it until i reaches 37 degrees Celsius. Be fancy and use a thermometer or be lazy like me and just dip your finger in it. When it's the same temperature as your finger it's done.

Pour some of the mixture over your yeast and stir until the yeast has dissolved. Then add the rest of the liquid.

Add cinnamon and sugar and stir until it's mixed.

Add the flour. 1-2 dl at a time. Work it in and then add more. You want a nice dough-y consistency and for it to not stick to the sides of the bowl. I never ever measure the flour. I just add until it feels right. Sorry!

Like this! Don't really think this picture helps but this is where I ended up.

Cover with kitchen towel and leave to rise for 40 minutes in room temperature. While you wait, do the filling.

The filling is butter, sugar and cinnamon that you mix together. I either use an electric hand mixer or one of those magic sugar and butter masher things my American friend bought me and herself doesn't know the name of.

Looks nasty but tastes delicious! Don't eat it, go browse Imgur instead!

Told you to use a bigger bowl!

Pour out onto floured workspace. Knead/fold until you have a smooth dough that don't stick to your fingers.

Cut in half and leave one part to rest while you work with the other.

Rolling it out...

...spreading filling on it...

...rolling it up.... (i use the scraper to get it off the bench easier, it sometimes sticks and tears if your'e to fast)

...cutting it up...

...and putting them in little paper cups on a cookie sheet. Cover with towel and leave to rise for 30 minutes in room temperature. Do the same thing with the other half of the dough.

Fun fact of the day: The little paper cups are called "bakformar" in Swedish. "Bak" can mean both baking and butt....

Whisk up an egg in a small bowl. Use it to brush your rolls after they finish rising.

Add some sugar on top.
Bake in the middle of the oven at 250 degrees Celsius for 8-10 minutes.

Leave to cool on a rack covered by a towel, and try not to eat too many...

...but you need to taste so you don't give your friend poisonous rolls right? ;)

The original recipe actually calls for cardamom in the dough. But i don't like it so I go with cinnamon instead. This is my way of doing it. There is plenty of others. And people sometimes do fancy roll ups with knots and braids and other stuff. I'll stick with the easy "cut up a roll"-method

looks good

Thanks! Made another batch yesterday because the cancer patient with no appetite loves them. It's good to help even if it's a small thing :)
