I’m not a fan of sausage but I wish I was because it’s not bad for you. It’s just too much chewy meat in a casing; I have a major texture problem and avoid all foods that are chewy, like calamari.

Small point of order: Calamari is not chewy when cooked exactly perfectly. This makes it a good test for a cook, because if it's even SLIGHTLY over or underdone, it's chewy (And gets more rubbery the more under or overcooked it is).

If you manage to cook it exactly in the sweet spot, it's actually quite tender.
