Sort of? Monks still can convert and heal units, just not as well. They're actually now a great counter to the Knight line, which has been low key overpowered for 20 years and people have just accepted it.

Yeah, they didn't have budget to do actual regional voice lines in the original game, and — because it was set SO far in the past (progressing from the stone age to ancient greece/mesopotamia/etc), they decided to just ad-lib a single set of generic "cave-man talk" that every faction shared. Priests were one of the few units with a unique "old man" voice, and they had multiple lines of "weird chanting" for their unique move: turning enemy soldiers into your soldiers.

It was particularly hateful in that game because it had an extremely long range (longer than archers), and basically was a random dice roll every couple seconds to see if the "conversion" would take. So once you heard a "wololo" start chanting, you'd go "OH SHIT, WHERE?!" and do a panicked search to find the enemy priest. Sometimes they'd convert right away, sometimes it took a long time. But it was strong because it could "take" any unit away, even the most expensive elite ones.
