Had pozole rojo last night. Made a huge batch and froze a bunch. Mostly followed the Serious Eats recipe, but made my stock 1st with pork neck bones, trotters and onion/garlic. Yummy.
Oh yes, they do, and some get very angry when it’s explained, demanding they know better while spraying juice all over, every time they squeeze citrus.
