It sounds like he says Sweetgum at the end of the video. Sweetgums are a tree that grows fast and has a tendency to drop branches. It probably lost a branch near the canopy years ago creating a cavity for water to gather. Then it slowly grew more and more rotten inside the trunk making a large hollow. There were probably a few days or weeks of heavy rains before this video that filled that hollow with water. Some rotten trees have wet spots near the base where it starts leaking out.
There is a crack/hole in the tree higher up exposed to elements. Fills the void w water when it rains. The smell of these cavities is unlike anything you have experienced before. First time i cut into one i puked right then and there. Still had to finish the job.

Alternatively it's a disease (maybe slime flux) but I don't think it'd gush that much; that's more of an ooze.
