Practice. They don't teach it but I think it might be in the move set. It's right after a parry you don't use the grab move.

Lawbringer is reallly good at stopping approaches. He has a "shove" which is a super fast unblockable that you can use after a normal block

/2 and use a side light attack for around 15 damage. Some say this isn't balanced but Warlord has the same thing in with more damage already

It pushes the enemy back a few feet and let's you get a throw in for even more pushback

there is technically nothing guaranteed after a shove. All followups can be countered, EXCEPT a new tech where you unlock as the shove hits

Most characters are kind of defensive. The game encourages defensive play over offensive play because there is very few ways to 1/2

You can, but its not optimal and its not the norm, at least so much as i've noticed both playing and watching streams but YMMV
