My wife was working at Red Cross taking blood donations today and was having a rough day because they were short staffed.

I asked her what she wanted for dinner, she said "I fancy a Beef and Mushroom pie, see if you can get a family size one from the supermarket" Well 3 supermarkets later, no one has a pie on Easter Monday. So I made one, not bad if I do say so.

put a plate over the pan and invert, then do the same with a baking tray

Its a non stick pan but I do grease it with butter as well

I love making mini pies, they're a family favourite. I use beef mince, mushroom, and bacon, with Worcestershire sauce. I line a mini muffin

Tray with puff pastry squares, put the filling in, add a little cheese, then fold the pastry closed and baste with egg before baking. Yummo

Party pies are normally made with shortcrust. And trust me, my homemade mini-pies taste WAY better than frozen party pies.

It pains me there are no meat pies like this in America. Makes even finding recipes hard. I'd use this one, but I'm not much for mushrooms

Sure, dice them and throw them into the slow cooker. To mix it up instead of just onions you could add carrots and celery as well as potato.
