Vacuum sealed for freshness ?
20lb pork belly with rib
Side view
Skin cut off
Divided in three
Wet cure for 5lb slab- 2 cups water( enough to reach past the tip of your bacon ), 1 teaspoon of cure, 1/4 cup salt, 1/2 cup dark brown sugar, 2 tablespoon red pepper flake, 4 tablespoon black pepper, 1/4 cup shopped garlic. The meat must be flipped daily, and should sit in the cure for 5-7 days.
1/2 hour water bath for excess salt removal
Heavily pepper both sides.
Smoker at 250F for 2.5 hours or to internal temp of 150F. I put two rounds of hickory wood to smoke during this time.
Take out of smoker and chill, hard to cut bacon when its warm.
4mm thick is perfect for thick cut bacon
We got 18 1/2 lb (around, can't be exact) cut packages out of this!

I know that diy is higher quality and a bit of a hobby. But damn if seeing the steps doesn't make me think "$8/lb sounds reasonable now"

I grew up on a farm. Homemade bacon has more steps there, many of them very loud and then messy.
Justice4ducks
Most bacon is like that, in Ireland we call them rashors
DoYouKnowThat
You just made me change my dinner plans

But think of the poor pigs! Those chubby, delicious little meatballs on legs that I love to eat! What about them!

I'm suffering right now.

Can I please have some bacon...??

Homemade anything is usually better than store bought
thevortexmaster
I've never done a wet cure. Just dry. Don't have room in my fridge or want to wait that long hahaha
Aristakris
I have an extra fridge in my garage! Otherwise a dry cure might work a lot better lmao. That's my next venture.
thevortexmaster
Turns out pretty good. I have about 20 lbs in my freezer I need to start. I would like to try a wet cure though. Yours looks good
DrunkSnoopy
Whats the brand of the slicer op?
Aristakris
It's the smaller version slicer from cabellas! It has a short throw I might invest in the bigger one.
DrunkSnoopy
Thank you

Looks good!

Are you single?
Aristakris
I'm a married woman! So unfortunately for your sake no.
beachbum273
You need a bacon press and a nice cast iron skillet. Lodge has 'em :)
talianagisan
Peppered bacon is great but its like roofing tiles if the pepper binds to the meat good. Good for a wrap around other food tho.
PictureArchiver
I want you to marry me! I don’t care what your family situation is right now but you’re going to marry me, I won’t take no for an answer!
GingerLaird
@OP You better be careful with that cutter, it's really dangerous.
ZeroDucksToGive
I think I'm in love
Aristakris
Endonae
I would hope it's better! That's a lot more work than buying bacon at a store.
thisisausernamelikeanyothersbutthisonesmellsweird
Most home made is better than store bought.. Unless you fuck up.. and burn the bacon, fall back over and crash in to the dog food and fart

I recently started making bacon too! I found putting the belly in a vac seal bag with brine made it easier to flip every day. (1/2)
ashleyguacamole
(2/2) also give apple wood a shot, I preferred it over hickory
Joylove
And here’s me making unsmoked bacon because I don’t have a smoker and I prefer unsmoked.
upthehillandtotheright
Well fuck. When i get a house i need a deli slicer, smoker, and vacuum sealer
DaikonNoKami
If you get a house* ????????

All these things to make bacon maybe once a month
kelseysaurusrex
You better get an extra freezer too. My dad buys meat whenever it goes on sale, which is a lot and then does a batch when it's overflowing
imakeshit
You really only need the smoker. My 10lb pork belly didn’t last a week after it was smoked.
lsnasty
And a statin prescription
phantomdreamer
Put it on the wedding registry.
drdildamesh
Also, maybe a treadmill.
Aristakris
The key is to eat in moderation! But also having a treadmill helps. ??
UndulatingTerrain
Nah, just get a king size coffin.
LesLesVegetables
You can come over and smoke meats with me. BYODL (Bring Your Own Deli Slicer) though, or beer. I don't care.
unkiereamus
How about I bring a deli slicer and liqour?
LesLesVegetables
Deal.
NotaCPA
my old tenant had his own deli slicer. strangest thing I saw in the apartment...the bacon was great though.
dtallen243
Did he pay u in bacon in lieu of rent?
NotaCPA
I would have accepted bacon 100% of the time. my no ex-wife was 100% against it. But I made a side deal with him. he made me bacon. I kept 2
NotaCPA
his rent nice and low. had wild boar bacon from Alberta, hand made german sausages, home made maple smoked bacon, heritage pork bacon.
dtallen243
Damn wish u were my landlord
Aristakris
It's the only logical decision!
BulletToofTony
Well shit, I've got all three. Why the fuck am I not making some delicious bacon?!
4vie
Out of curiosity... how much did the gear cost?
Aristakris
150$ for deli slicer, 350$ for smoker

Masterbuilt 30” Bluetooth Digital Electric Smoker Broiler. It works perfectly I love it.
NapoleonDynOmite
How much was the slicer? I think I'll probably stick with a knife but kinda curious
Aristakris
150$
NapoleonDynOmite
Yep I'm gonna knife. I have made my own bacon before. Awesome. A little trick if you want thin bacon for burgers. Freeze B4 you slice
