The last PC CPU with an 8-bit data bus was the 8088 and it still had a 16-bit architecture.

Exactly. It's an 8086 with an 8-bit external data bus (so I/O and memory access took twice as many machine cycles).

I don't think it really counts as an 8 bit machine if it has a 16 bit ALU and registers, and just loads two bytes in a row of memory.

Start with the 40K wiki and just crawl through that for a while. It takes time but that and Arch Warhammer's lore videos help fill in stuff.
