It actually has a lot more to say about shellfish than homosexuality. I never was sure why that part got so much focus.

Most shellfish cant be eaten and cooking technique is different and other issues, people just got tired of dealing with poisoning and shit.

I think because Moses and his people spent 40 years in the desert. Any shellfish they found must've been spoiled as hell.
