I find that you need to simmer for at least 6 hours in order to get the gelatin out.

That's what I was thinking, I just wasn't sure if it would be appetizing if it had/would turned to mush.

Some advice on stock: save your herb/vegetable scraps in a sealed bag in the freezer. When you get enough, you can make stock and freeze it

Just be careful how many onions you put in the bag. And don't add peppers or tomatoes as they're too acidic
