In this case, stands for Computer Numerical Control. Basically machines that use a coordinate system for moving the part or cutter around to make what ever fancy thing you've programmed.

Computer numerical control. Automated tools cutting stuff in a way programed in (though technically a lot of 3D printing is also CNC). Like a lathe or a milling machine, but with a computer driving it.

It's a machine shop for small runs and prototypes of machined parts. I've used them for sheet metal enclosures and they're reasonable, but for CNC parts (way simpler than this) they were more expensive than I expected.
