Just count calories. Keep it to 2100 or so for a month or so to get used to less food, then gradually get down to 1200-1500 a day

Dont stop. Your muscles are just not used to working, the more you do it, the more your muscles recognize it and adapt. Start slow.

Start with walking or even better go swimming/diving because it protects your joints and still lets you burn a ton of calories.

Are you sure? 80kg body weight @ 15% fat = 12kg fat; 88 kg body weight @ 15% fat = 13.2kg fat. 13.2>12, so I gained fat (as well as muscle).

Carbs break down into glucose. Glucose that isn't used by the body for energy or glycogensis is stored as fat.
