All the people I know that actually live out of these tend to spend majority of their time outdoors. They tour x-country for charity work. ¹
So they spend a minimum amount of time indoors entertaining themselves. ²
Totally get that, but just seems like a waste to have a kitchen like that then have to eat on your lap!

The main issue with these things is head room. Most of the conversions i've seen i could live with are ones where they raised the ceiling.
