For the panel gaps at least, those aren't really covers but entire modules that can be popped out and back in for easy servicing, so they're not going to have a seamless dash like a car which are a huge pain to dismantle and reassemble. As far as materials go I'd guess it has to do with the fact that they're designed for very long service lives (50 years or so) without degrading too much
Anything that is sat and breathed in for 20 hours a day will end up looking like shit. Humans are cool but we are also nasty fleshbags full of different winds and liquids.

LAMovieDesign
What kind of plane are you flying?
MoonAmericanFloydHeywoodR
I like those little model airplanes you have in your office. They must relieve the humdrum of being behind a desk all day.
JohnWickdidnothingwrong
Your building is wicked tall.

The B-52s built for Vietnam are still flying today.

First 52s built in the 50s

thats not an office. thats a cockpit. Im not sure someone who doesn't know the difference should be flying.
ChalupaJackson
Well I do have a desk so………
thebonesofmyancestors
Meh, you do your job in it, then it's an office. Makes for a better headline too.

I'm always amazed at how cheap cockpits look (as in: badly fitting covers, almost Eastern-Block looking plastics), consering their pricetag.

The old widebody passenger tri-jets (DC-10 variants and TriStar) were so awesome back in the day
rezexelon
"were"??? Trijets are still awesome as fuck!
squishybaker
While not a tri-jet the VC-10 is pretty darn sweet.

Sir, I have a package labelled 'complimentary walker' here for you?
