I went to a fairly prestigious culinary school (think Emeril Lagasse) for 2 years and got my associate's in Baking and Pastry. I would have gone for a 4 year degree, but college is not cheap. This is me, and some of the desserts that I made.
Baked Alaska
The only picture I have of an Alaska that I didn't end up burning. Still looks good though.
Rye and Sourdough Breads
The rye is the loaf, the sourdough is the round off to the side. I am a damn fiend for sourdough and this was my favorite, but also most stressful class. Breads are hella time consuming.
I don't even know what to title this. It's just a decorative bread that's like 20% salt. AKA, you don't eat it, you just use it to show off wine bottles. Easy as hell to work with.
French Baguettes
A common staple in the french culture, but crazy to make perfect. A french Baguette is defined as being exactly 250 grams, 1 meter long with 5 equal cuts, distinguished ears and points, with dark coloring. Basically, practical exams were super fun.
Fluffernutter Cupcake
I interned at a cupcake shop, and this was my favorite cupcake to make and to look at. So pretty.
Creme horns
The first thing I made at school; a puff pastry baked into a cone shape, filled with chantilly cream.
Swan cream puff
The only swan who's neck I didn't burn! Go me!
This is an Entremet
An entermet is basically an ice cream cake, but generally with mousse instead of ice cream. This one happens to be a caramel chocolate one.
Raspberry Entremet
That is my first attempt at a chocolate flower. It was terrible, but it tasted delicious, soooooo....
My first attempt at macarons and look at how damn well they turned out. This is a citrus entremet, with a white chocolate vanilla glaze. It was quite tasty
Fishy
This is made completely from sugar and a sugar substitute called Isomalt. Super stressful to make, and extremely painful should you mess up
But look at that crab. Such a good looking crab.
Also from my sugars class
I took this picture not 5 minutes before the base and lil grass blades broke. I really hated this class.
Band of fruit, fruit flan, what have you
Super annoying to line all that fruit up, but you should definitely have every type of fruit in each slice you get
Some sort of hazelnut cake
I really only included this because of how nice that stencil work was
"Honeybee cake"
Was dry as hell, but looked so good. All those bees were made from marzipan
Plated desserts focused on plate designs
This is the first one I made and its a chocolate lava cake with a mango lime sorbet. I loved that sorbet. If I could have had it's children, I would have, that's how good it was.
This one is a chocolate mousse with a raspberry sorbet and a caramel amaretto sauce.
I'm not really sure why I included this picture, but I've been drinking, so who cares? It's a cheese cake with a mixed berry sorbet and fruit reduction.
My practical plate, also a chocolate lava
But this time with a salted caramel Ice cream. And do you see that lil swirly on top? That's pulled sugar. I burned all the feeling out of my finger tips practicing making those.
These next few are from my advanced cakes class
This is my family crest. Yeah, seriously. Don't mess with me.
The only requirements for this cake was that it look like a package. I'm really like space, so it's all star constellations. On the top is Gemini, Sirius, Orion, and Taurus, the sides are Cancer (for me), Leo (for my sister), Cygnus, and Ursa Major.
Look at those edges
I am so proud of this cake. Most people just look at it and say, "oh, neat" but those edges are so sharp you could cut yourself. It really shows how much effort I put into this
Just a comparison
I feel its necessary to see other's cakes to see how well mine really turned out
My final for Advanced Cakes
I really wanted more roses on it, but those took me 5 minutes each, and I just didn't have time for more
Generic spread
I made these for my cousin's open house. A bunch of cookies, some tarts, napoleons and some rosemary, italian herb bread that I underbaked. I'm still upset with myself for underbaking them and it's been 5 months.
Anyway, I hope you liked this album and if any of you are considering going to school to be a chef, feel free to ask questions! Ask questions even if you aren't!

Please, marry me and my gf
snoogns
Congrats and welcome to the industry. Don't worry, you won't need to sleep or eat anymore! Now get to work!
arc1o1
And you did this all without any arms! Amazing!
ProbeGT
Congrats, @OP ! That caramel chocolate entermet looks amazing, I need to go buy something like that right now ! :P
Katiepants
Congratulations!
Soach88
as a Chef nice work keep it up, we need good Pastry Chefs
lizosaurus
Well done. I was an apprentice pastry chef for a month and couldn't cope. I can see how much effort has gone into it all.
JaimeFaireDesCroquettesAuChienLaaLaaaLaaaa

ynzgeezmyob
As a fellow culinarian, *sanding O*. I went to LCB/ A.S. in Culinary Arts. Loved baking. I did bread, the swans & tons of cakes. I miss it.

As a french, i've never seen "dark" baguettes, that's definitely "trop cuit" !
TerribleHalfAsian
I knead to get better at baking. Rye is it that i can cook fine, but i struggle with bread... i should just roll with it and stop being a
twinning
If you had commented earlier, this would be top comment.
TerribleHalfAsian
Hate to be so bunt about it, but i have to agree! At yeast someone was able to see my puns, proofing that it didnt go to waste!
TerribleHalfAsian
Baguette about it. Eh i always have some extra dough anyways so I'll just stick to store bought..
Mystic5523
LOL Read it as Pasty Chef and thought, well hey, at least you can bake! :D
UndeadGopher
TIL that it's always been my lifelong dream to go to culinary school and eat everything, including the decorative salt bread.
FoxySpirit
The salt bread becomes rock hard, wuld not recommend.
aprilludgateduire
it's the best and worst part; I gained so much weight just eating all the delicious food all the time
Seven7greens
That had to be the best part of Culinary school, the stuffing of your face. And Baking and Pastry was my favorite class.
INamedMyCatRickyAfterASkidRowSong
Mine too! Although my favorite chef was in my international class. He was BA.
Seven7greens
My chefs were chill af. They only seemed strict if you were caught goofing off.
MicahL
If I was your boyfriend, I would need a wall removed, 12 men and flatbed truck to get me to my dentist appointment.
breadstickez
Pshhh like you'd have any teeth left after those sugar swirls. No need.
GTimgur
He's gotta get fitted for the dentures at SOME point though.
umbigo
I signed in for the first time ever just to say this: Zinfandel Port? ZIFANDEL PORT?!? That's sacrilegious.
twinning
Ha, my chef handed me a bottle and said take a picture. It's empty and we didn't get to drink it.
umbigo
Good for you. It could have ruined your life! :) have you ever tried real port wine from the Douro? It may make you change your career!
cusmrtgrl
I'm a geologist, but when I am done with science, I'm going to go to culinary school to open a bakery. Dr. Chef, everyone!
Zathyra
that is really odd, I started studying geology/palaeontology but now I am doing an appreticeship to become a pastry chef ^^
cusmrtgrl
Great minds think alike! :)
SkuIIpoopI
Me too!
rapidrhino
Pastry Chef? You mean Diabetes Fairy.
tradyk
As someone who finished their pastry cook apprenticeship this year, *fistbump* and those are some nice corners on uour wedding cake.
tradyk
Though, honestly, your final assessment looks rushed and not to the same standard as the rest of your work. What was your time limit?
twinning
Yeah, I really hate working with fondant and I also had to to a spray and 3 gumpaste roses (which were already started) in 4 hours
tradyk
Sounds like the fact that there was a time limit was what was throwing you off. From the looks of your stuff, that shouldve been easy foryou
Taikimigoto
I went to Johnson & Wales as well (culinary), which campus did you go to?
twinning
Providence!
Taikimigoto
Word. I went to the Charlotte campus. I've heard the providence campus is awesome!
twinning
The culinary labs are soooo nice! Everything else is just kind of eh. Serious question: Did your dining hall food suck too?
Taikimigoto
Yeah our dining hall food sucked too. I guess it's just a constant thing at JWU lol
hippokitty86
That's where I went for a short time. But this west coast gal couldn't hang on the east coast!
piperdude
Psht! I could do that! If I had time, and talent, and creativity, and dedication, and years of education...
gutierrezdrapery3
Marry me
TheGameDoctor
You can make a rap verse outta that
piperdude
Totes! Iambic Pentameter is for amateurs!
Rymdblomma
I'm like 90% sure pasty chefs are wizards. And pastry chef school is Hogwarts.
willdmar
It's pretty much as close as you can get. There were times when legitimately all my homework was to plan out the next day's plated dessert.
Lovethesmelloftoastedsourdoughbread
A girl who can make good sourdough bread is a keeper!
sharkkibble
I thought her sourdough looked just okay. I am an artisan bread baker, and you can basic flaws on her bread and baguette.
twinning
Hey thanks friend. Breads is super stressful to me and I've only done it for a total of 18 days, at 6 hours each. But way to build me up.
sharkkibble
It's not my job to build you up. I wasn't trying to pull you down either. It was simple criticism, which is something that will always occur
sharkkibble
in this field.
sharkkibble
I get a lot of criticism as well, and that's just how I get and have gotten better. Shrug.
meganator
I want all of that, in and around my mouth
jonastone
Is it wrong that i want to stick my dick in the chocolate cake?
MrPornProfessional
As a diabetic, I think I need a shot...
WisdomPlaytime
OP, how can you make it through cooking without eating everything along the way? That's the problem I run into.
winjinbin
You get sick of eating it pretty quickly
MOTHERFUCKINGJESSEEISENBERG
Is guess meganator will have his cake and eat it too.
meganator
;D you know it
TriptychAngel
I'll give you a homemade cream horn
GoBlue
Including her?
PopatoMc
She's future wife material bruh
COLONELSARGE
Especially her.
Izzdelp
Including her
FFFUUUUUUUUUUCCCCCCKKKKK
You heard him.
ZombieZooZombieZoo
Ayyyyyyyy. But really @OP, these all look amazing. Good work!
justahumanonline
how far a radius are we talking? if it goes too close to me, it's mine.
lennonater
Hey, I'm at JWU right now what's up fellow wildcat?
InvadingZygonFleet
RIGHT?! I'm just sitting here, come across this, and now I'm positive this was on our campus!
twinning
Yoooo! Providence?
McClapyohandzzzz

Collarupcool
I'm at JWU too! Hell yeah for little Rhody!
dustyllama
My goal in life is to marry someone who can cook
thefatlonelyjew
well, if it helps, i have it under good authority that Yan can cook
Yodaloid
I can cook anything in a microwave, or an oven if it is prefrozen!
27yoUGLYvirgin
My goal in life is to marry someone. :(
hencethequeef
I can cook, but I need to marry someone that can bake.
Dawnstempest
Cooking is terribly easy to learn, painful sometimes, but all things worth learning are. Want to know any recipes that are easy to make?
Dawnstempest
Message me and I'll tell you some.
techley
My goal in life is to marry someone to cook for
SportsPhotoGirl
I can cook... I just hate cleaning... My goal in life is to marry someone who will do all the dishes after I cook... Any takers? Lol
IAimToMisbehaveLikeALeafOnTheWind
Same here! I love to cook but I hate grocery shopping and cleaning... For one. :/
somespazzoid
Soo.. how's it going?
Sayagain
I don't mind dishes and love food and sports. How you doin?
LifeDoesntDescriminate
I have exactly this arrangement right now. I call him the maid and he tells me to get back in the kitchen
Eowyneb
This was my arengament wih my husband but he has been lavking his part of the deal!
angrymoustacheseals
Don't marry a chef. You'll eat Taco Bell for the rest of your life cuz they're too busy feeding everyone else.
twinning
Truth.
Ryryryryryryry
And when/if they do cook, they'll make a ton of dishes for you to wash.
TheGirlWhoCouldntEven
I took a bunch of classes outside of my regular school so I could cook/bake...but I don't do it for a living. I just did it so I knew how.
TheGirlWhoCouldntEven
super awesome decision.
MamaKin
I used to bake all sorts of breads, then had to go gluten free because of medical reasons. Crap. I really miss the art of baking breads.
twinning
I am so, so sorry for you. That would devastate me
MamaKin
Thank you for your compassion, btw. That's really kind of you.
MamaKin
It is still devastating to me even after three years. Gluten free flours just don't translate to nice, warm yeasty wheat breads.
CryloRen
I am going to have to go gluten free too, cause of medical reasons. I make a delicious rosemary bread and homemade butter. ;-;
MamaKin
You have my empathy. It's not easy, but you'll be happy to not have upsetting symptoms anymore.
CryloRen
It doesn't really have symptoms directly related to eating gluten. Avoiding gluten can just slow the destruction of my thyroid, which
CryloRen
is going to happen anyway regardless of the gluten. Gluten just speeds up the process.
MamaKin
Really? Could that be why my thyroid began tanking years ago?!
CryloRen
I'm sorry if your symptoms for it are painful. I think we have different medical conditions. :(
27yoUGLYvirgin
What symptoms did YOU have? Curious onow.
CryloRen
I don't have symptoms directly related to eating gluten. I have an auto immune disease that is happening regardless, gluten just speeds up
TheSconeRanger
I cheat on my baked alaskas. Hello blowtorch my old friend...
Chrichelle
"I've come to burn some shit with you again!"
twinning
Blow torch is not cheating! Blow torch is how its done, son!
BigHandz
I've come to flame with you again, Because I have a vision bakinggg...
Equanimous
Op @twinning are you working currently & where are you based?Need some large-scale pastries &desserts for a large function, keen?
Jak3Barnes
So true and so much easier - but my tutor will not have it :( he says you can 'taste the torch' on it
Incantanto
But surely then its not actually baked?
twinning
The cake that layers between the ice cream and the meringue is baked.
TheSconeRanger
I have no patience for a true "baked" also blow torches are just too much fun.
ImgurLurkingLurker
Question do you buy the bake shop torch or the good ole fashioned hardware store type ?
winjinbin
Hardware store, cheaper on the long run. I've only ever worked at one place where we used the teeny ones
StereotypicalMurican
I made creme brulee using a blow torch I bought from Home Depot.
twinning
Well in school, we used giant butane torches. At home, I have this teeny little creme brulee torch. Easier to finagle with, but eh.
HaukanML
It is so mutch harder to get an even nice color with the small ones
