Pretty sure thats supposed to have a rod that goes through the center and clamps the cannister on both sides, preventing this very issue and slotting nicely into a rotisserie motor to rotate automatically

I've pulled that move dozens of times. I only left the tongs on the grill once (working a line) and then forgot and grabbed them barehanded 5 minutes later. I still have the print in my hands from it :D

The idea was to tastefully char some garlic for a different flavor than roasted garlic, but apparently I’m all thumbs sometimes and inanimate objects can fight back.

That’s a lot of garlic! I’ve stuck a couple cloves on a toothpick and grilled them before but didn’t notice much difference so I usually just put them in some tinfoil with a little oil. I’m generally using gas tho, not charcoal or wood.

Yeah those things suck, I haven’t used them since. The audacity of them to cost me not only garlic, but the whole shine of that day! Note to self, don’t impulse by grill equipment at midnight on social media.

Just confit garlic. Cover with 1” oil in a pan. Low low heat, cook until golden brown, a couple hours maybe. Then keep the oil (garlic oil) and puree the garlic. Thank me later.

Charred garlic is a specific flavor that brings in a particular (targeted) bitterness while still retaining some raw garlic sharpness. Confit is too sweet and mellow for what I was after with this experiment.

That’s the neat part, I don’t! This was an experiment to see if it was even worth it, and we can see how well that went. For product quantities I’d have to grill like 5-6x times that amount, so that process is a no-go. Oh well 🤷🏻‍♂️

What about those cages intended for grilling fish? Something like this. https://a.co/d/0qwd86u. More surface area, larger for higher volume, locks closed, just need to make sure the mesh is fine enough the garlic won't slip through.

It’s a better investment of effort to build flavor another way. If we try to scale that idea up to 5 pounds of garlic for a batch it becomes cumbersome and inefficient. All processes have to pass the ‘will this make me money’ filter 😅

Whenever I am with a child and something disastrous happens (like flour spills everywhere or a container drops, making a big mess), I always laugh and say something like, “This sucks right now, but I promise you, sometime in the future, you will look back at this moment and realize that this was a good lesson as to why it’s important to be mindful of your actions, and be aware of your surroundings.” And then I point out, “at least no one was hurt; that matters most.”

I’ll get you an epoxy-sealed clove of garlic instead of a diamond 😂

I was originally going for a charred garlic flavor over a roasted one when developing the curry mustard sauce I released last year, but I decided to spend my effort making a custom curry powder instead. This moment definitely helped dissuade more garlic experiments for a while :P

Full batches of sauce (20gal currently) use between 3-4 pounds, so we run through a hell of a lot!
