Although this is my preferred way of eating steak, I just lost a friend to colon cancer. The doctor said it was most likely from him eating steak rare. Which he did a lot. Even less than rare if the chef allowed. I now eat my steak medium well. Plus I rarely eat steak anymore. Fuck cancer.

Appearance is not a good indicator. What internal temp did it reach? 145 °F (62.8 °C) and allow to rest for at least 3 minutes?

Seems perfect to me, although some might want a little bit more pink and less red. But for a cut that big, the ends of the meat that are a little thinner and cook a little faster might offer those who prefer more towards medium instead of rare some slices they can enjoy (currently looks to be medium-rare to me, right in between).
