1/2 lb. bacon

2 broccoli heads

Cut broccoli into florets

Beer #1

Cook bacon in cast iron Dutch oven

I like the bag of pre shredded and washed collard greens. They're easier to do than getting the full leaf and having to wash and shred them yourself.

Ooohh, crispy

I add about 1/2 a bag a t a time

I don't measure but I'd say about 1 cup water added to collards

Grate about 2 wedges of Parmesan cheese. I buy the wedges from the deli of my local grocery store. The pregrated kind doesn't melt properly.

Add about 2-3 tblspn of olive oil and 1 tblspn minced garlic to broccoli and toss

Yum

Spread out on pan and place in preheated oven (425) for 20 min

Chicken breasts

Sliced in half flatways and cleaned up and trimmed. Or if you go to your butcher you can use cutlets

Ready for the pan

Cook chicken until done

Panko is the kind I use

Mix 1/2 panko &1/2 hand grated Parmesan. I am making dinner for 5 so I used 2 cups panko and 2 cups cheese.

Added 3 tblspn melted butter and mixed by hand until completely moistened

Next, I used 1 bottle ranch and mixed with the remaining Parmesan

3 cups give or take

I find sargento is the best cheese

Should be a creamed potato consistency (ranch & cheese)

Make sure to cook thoroughly

At least 165 degrees

Collards are done when most of the water is gone and stems are tender

Place chicken in casserole dish and spread ranch sauce generously over chicken

Covered

Layer with provolone cheese

Broccoli is out. Squirt with a little lemon juice. Fresh is best but all I had was this

Next, a little shake of the pregrated Parmesan

I forgot to take pics of the panko and cheese crumb topping going on top of the chicken, but sprinkle generously over the top and place in the oven on broil on middle oven rack for about 5 minutes to just brown the top and melt cheese

Finished product

DINNER!! Parmesan crusted chicken, Parmesan roasted broccoli, and southern collard greens! Bon appetite

That's a roast I cook in the oven. It takes about 2-21/2 hours. This meal only took 45min-1hour

I have a mason jar of tobasco peppers I grew last summer pickled. I use the pepper sauce for spice to set them off. Southern tradition
