French Fries made with beef tallow

This was the raw beef suet, from a cow we slaughtered on the family farm.

After rendering most of the fat, I put it through a sieve and filtered out all the burnt meat and connective tissue.

I only had russet potatoes on hand. I wish I'd had some Yukon Golds but I will try that next time. I also have a nice mandolin for easy fries cutting.

Since they are russets and I'm having steak with them, I decided to make them thick cut.

I rinsed off the excess starch...

Then I put them in the oven for a quick heat blast (my oven has convection modes) to dry them off. If they got mildly par-baked, no biggie.

Into the fryer! I use a standard cast iron dutch oven.

The thick cut required quite a bit of cook time, but they turned out well.

I used popcorn salt so it would stick better. If you don't have popcorn salt, you can crush table salt to a finer grain with a mortar and pestle. If you have neither then I can't help you. :-)

My 2 year old daughter really loved them. She basically ate nothing but french fries for dinner. They didn't taste like McDonald's simply because they were russet potatoes and I believe McDonald's uses Yukon Gold. They did taste exactly like "State Fair Fries" or Five Guys. They were certainly delicious, but I don't know how much better they were compared to using peanut oil (instead of beef tallow) because I didn't have a comparison. Next time I will have to make both and do the Pepsi challenge. The fries were certainly delicious and not much more trouble than peanut oil.

I sometimes freeze my chips between frying. Makes them crispy.

Oddly enough, McDonald's fries used to taste better (IMO) because they used to fry in tallow.

Yukon golds make poor fries. Kennebec work great. Try blanching in low heat oil instead of the oven, then serarate & freeze, then fry high!

If you soak them in sugar water before you cook them, they get that real crispy outside. Don't worry, they won't come out sweet

Those look really good. Also, what we did at 5 Guys was soak them overnight and then fry them twice. First time til they're limp, (1/2)

Russets are great for fries. Yukons not as much. Do a low heat par fry first and drain them then do a second high heat fry on them

Fun fact: the allergen is in the protein of the peanut so in theory you could have things fried in 100% pure peanut oil but it's risky.

I do the soak and double-fry too (Alton Brown), but I save the grease from cooking bacon and mix 1:1 with canola oil to fry them in.

As a Belgian, i can't help but give some advice: Peel & slice the potatoes, submerge them underwater for 1-2h to remove the starch. 1/

Take out of water and let dry (use a clean towel). Pre-bake at 150-160 °C for 3-5 min. Take out of oil and let cool for at least 30 min. 2/

2nd bake at 170-190 °C for another 3-5 min until golden brown. Add salt to flavour & serve with mayonaise. Bonne apetit! 3/3

Once at a lower temp to cook(300-325) then a higher temp to crisp (375). Good job though, they look tasty.

Home would sell it for pennies on the dollar and I loved using it to pan fry just about everything. Good for seasoning cast iron too.
