Varnish/soil cleaning is never reversible. You must do it with careful planning.

His videos giving people the wrong idea of what restoration does. My opinion? Should be mostly up the private owner.

But you are right, sometimes it depends of the owner’s desire. But the restorer should always suggest the less invasive action.
I remember a triptyque restoration with the Virgin Mary where he put so much resin in the lacks and crack of the wood. 1/
And that type of infiltration can not be undone. Also the retouch denatured a bit the delicacy of the work for my taste.
Yeah but that piece was severely damaged and completely falling apart. And you didn't see it in person
