Technically, you're supposed to pour it into a strainer IN a bowl, make the sauce, and use pasta water as necessary to adjust sauce.

I'm calling BS on #2. For that to work your strainer has to be the exact size of the pot. Also lots of them have bases to stand upright.

It's a trick to be lazy/quicker. Can be done with a lid, another pot, etc etc etc. Use it often... but it's sure as F not the "right" way...
