The Grim Reaper does not kill. He cuts the tether tying the soul to the body (using the scythe) after the body has died, so that the soul can then travel to the afterlife. He escorts the soul there. The Grim Reaper does not take life, he offers aid and companionship as you transition.

It is all symbolic. He could also be called the grim harvester. It shows that he reaps all in their time. When harvesting grain with a scythe, you take a swath. You don't evaluate each head. There is no plucking or pruning. When that field's time comes, it all gets reaped. Mature and immature. Grain and weed and sapling. When it's time comes... It's not personal or individual. It is the cycle. Making room for the new. To everything, there is a season. Hope this helps.
