Around here we have low-lactose and no-lactose milk products. Low-lact is made by adding enzymes that turn the lactose into sugars, (1/2)

Where as no-lact is made by flash-heating the milk to 120C*+ to break the lactose and give it a shelf-life of multiple months

Much of lactose intolerance is for cow milk. Many can’t eat cow milk but they can eat sheep or goat milk/cheese

That's milk allergy, triggered by proteins. Lactose is a sugar, and found in milk from all mammals, including goats, sheep, etc.

Most aged cheese is quite low in lactose. Anything aged longer than about 12 months is usually safe for all but the weakest intestines.

Yogurt is fermented but fermentation does not mean the lactose is gone. It might be that they use goat and sheep milk instead
