Just use skirt steak. It'll be a fraction of the cost and taste the same. Remember to cut across the grain of the meat.

Gas grills are outside gas ovens, some homes only have electric. You can get woodchips or stones for flavor. He's using the griddle as well.

I have issues. Salt that steak 1 hour before grilling. Grill the ribeye, then cut it.

Also, Best Foods/Helmens or GTFO. Kewpie is also a good substitute in a pinch (US version, the Japanese is too fishy for my pallet)
