On a similar theme, There's an early access game on Steam called Critter Cove. It's Animal Crossing mixed with Subnautica. I highly recommend it. Relaxing island punk theme with funny characters.

The only "grindy" part is the Battle Pass, and even then if you play just once every three days, theres plenty of challenges to complete the BP within the time limit. You also get the BP permanently like Halo Infinite.
