Korean spicy stir fried pork (Jaeyook bokum)

This is one of my favorite Korean dishes because it's quick and easy to make and tastes great! First you'll need:

For marinade:
1-4 tbsp gochujang (red chile paste or sauce)
1-4 tbsp soy sauce
1 tbsp minced garlic
1 tbsp sesame oil
1 tbsp ginger juice (or powder)
1-3 tbsp sugar
Black pepper to taste
1-2 tbsp red pepper powder (optional)

For meal:
20 oz. pork loin or pork belly sliced thin
1 medium onion sliced thin lengthwise
2-4 green onion stalks sliced diagonally
1 bell pepper sliced thin
1 1/2 cups bite size kimchi (optional but recommended!)
1 container firm tofu (optional)

For marinade you can mix gochujang and soy sauce to your liking of spicy (1 tbsp gochujang to 3tbsp soy for mild, I usually do 2 of each, just need a total of 4) stir in garlic, sesame oil, sugar, black pepper, and ginger juice (use garlic press if no juicer) or powdered ginger, and if desired red pepper powder (I usually use 1tbsp as the asian powder isn't as spicy as your typical red pepper flake with seeds)

Toss pork in, marinate for 20-30 mins.

Set wok or skillet to medium high heat, toss in pork and veggies (I was out of kimchi but toss it in if you have it!), stir fry 4-6 minutes or until pork is cooked through.

Heat tofu in boiling water at this time (optional)

Serve with rice and tofu if desired.

I usually try to make this with the thin sliced pork belly but there was a great sale on tenderloin so used it for this one. Hope you enjoy!

Note that gochujang isn't your original chili paste. It has its own, unique, fermented flavour which cannot be replaced.

No, unfortunately. The flavour is unique. You should be able to order it from the internet. The container should last a while.

I love that spicy pork! The slightly sweet and savory potatoes go so well with it. Sorry, can’t remember the name of them though.

It’s amazingly fucking delicious. I usually call ahead at the KBBQ joints to make sure they have it. It’s a balancing dish.
