the knife is much higher quality than the fish

This is also the proper way to clean a large catfish. You fillet the fillets, cutting out all the not-so-good stuff.

Ratfish
Great skill, but a shame it's not wild salmon
wild sockeye is soooo good fresh
fmaragozis7
Yeah. I won't eat this stuff. Don't like Atlantic salmon at all. Doesn't even compare to the fresh Pacific salmon.
fireaza
Fun fact! Salmon was traditionally never eaten raw in Japan, due to wild salmon being full of parasites. Today, imported salmon is used.
keys79
I need a knife like that in my kitchen. Or does that qualify as a sword? A fish sword? Not to be confused with a swordfish.
0Chey0
Sorry man but you need a license to use a fishsword on a swordfish.
Krakencrotch
Get yourself a tuna knife
andMikesyouruncle
You also need a knife fish for paring and a saw fish for breaking down larger cuts
SobchaksWorldOfPain
And a hammerhead for softening the tough cuts.

Parasites ?. Don’t want the painful shits.
Gordogarbo
It’s generally farm raised salmon that only eat man made pellets of food so they have no risk of parasites.
And if it’s wild it has to be flash frozen immediately to about -40°F which kills the parasites.
Only 12:15! Haha

It’s easier with the correct knife. He’s using a single bevelled knife which are thinner than dual bevelled, and are suited to slicing fish.

Exactly. Gloved hands are often less sanitary https://www.delish.com/restaurants/a27153285/why-chefs-dont-wear-gloves/
BenderBenderBender
Totally agree. I’m guessing the glove is to spare his hand from soaking up the fish odor all day, and less about food sanitization.
