This is also the proper way to clean a large catfish. You fillet the fillets, cutting out all the not-so-good stuff.

Fun fact! Salmon was traditionally never eaten raw in Japan, due to wild salmon being full of parasites. Today, imported salmon is used.

It’s generally farm raised salmon that only eat man made pellets of food so they have no risk of parasites.

All fish for raw consumption has to be frozen in US and EU, so you're better off getting it while it's still frozen and thaw yourself.
