Most control comes from overlapping. It’s how you start to plan a piece. You build up layer by layer and finish it with outlines.

Yes you can switch caps like brushes. Bigger or smaller sizes. (Super) Fat caps are fillers, outlines and skinnies are for detailed work.

Most regular caps are designed to spread the spray more evenly. It takes some skill (and speed) to use graffiti caps without dripping.
