Between Vader and Kylo, not to mention plenty of others in whatever counts as canon EU, so many major villains were once Jedi.

Luke was already an accomplished pilot... Rey had never piloted anything or held a lightsaber. She handled both expertly off the bat..
Similar to Luke, Rey had quite a bit of experience piloting in the atmosphere. She also demonstrated quite a bit of hand-to-hand experience.
