The degree of democracy in a republic can vary. You can elect positions, or you can leave them up to your elected officials to appoint them without your oversight. Either way, theoretically, they're supposed to represent the will of the people. Either you allow people to elect incompetent or malicious judges, or you allow them to elect incompetent and malicious presidents and senators and have them appointed. Either way, the outcome is the same.

I agree. The thing to understand about the US is that we're a collection of "states" in the original sense - that is, (mostly) sovereign governments - under a federal government. Selection of state-level and lower judges and law enforcement falls under the authority of the state governments. So without a complete overhaul of the Constitution, you're gonna get weird shit like that at the more local levels.

IIRC when your Constitution was written, it was planned that this should be reviewed/renewed/modified every now and then - am I correct?
Yes I'm aware of the amendments but it boggles me that a document written in a time with way different structural/(geo)political/societal challenges is carried on so rigorously.
Of course there's the danger of coming out way worse in the end with a new set of rules... ah beans...
