Looks like mint. Try rubbing it between ur fingers to smell if it smells minty. If it IS mint, dry it to preserve it for a while

Definitely not weed. Could be a type of spinach? It's not a brassica...

Your best bet would probably be to boil/blanch it and try the leaves + stems from lower in the plant. Don't eat any more if they're bitter.

Amaranth or sweet potato tops, the former used in a fair amount of Indian cuisine, the latter in Asian.
