Getting ready to make paska, or kulich, sweet eggy Easter bread. This takes 2 days and a full dozen eggs and pound of butter but is sooo tasty.

Ready for overnight rise

Punched down and ready for second ride in baking forms

After second rise

After baking and ready to share with family and friends

Family member is gluten free, dairy free. In the background is gluten free dairy free paska, front are blackberries for gluten free blackberry pie

Cooking with sugar and a little cornstarch

Baking!

Finished and good to go

Peach pie was also made, peaches are from our trees

Making hrudka - egg cheese

Endless stirring, takes seriously an hour of constant stirring

Hrudka weighed to squeeze out the whey

Almost ready to come out

It worked out beautifully this year!

Other side

Cross section

Making oblatne!

Chocolate hazelnut ganache all done, waiting to assemble

Assembled, ready to chill

Chilled and cut

Cut and heading into the fridge

Oh my! The Easter Bunny left a few filled eggs for the egg hunt in the morning (all work thus far was completed on Saturday)

Christ is Risen! Easter morning, time to eat some of the goodies for breakfast - paska is awesome with butter and kielbasa

Great cross section- no tunnels or undercooked bits

Butter

Farmers cheese! I forgot to include pictures making it

Easter baskets

Mmmm - 3 kinds of kielbasa, dessert rolls, paska, cheese, wine, horseradish

Table set for fancy Easter dinner

Green beans for dinner

Lamb racks ready for the grill

Kielbasa platter, wine and duck fat roasted potatoes

Ooohhh - duck fat and potatoes are magic together

Paska sliced for the table

First course - we usually do a pelmeni soup but I couldn’t get to Russian market this year, cheese tortellini will have to do (they did fine and were tasty)

Round 1

Roasted ham, yes it got a bit over done

Potatoes and lamb

Roasted squash, also got overdone with the ham while I was fussing with the lamb

Dinner plate - delicious lamb, potatoes, horseradish and squash

Dessert table - after a nice 2 hour, lamb induced nap

Oblatne

Peach pie

Blackberry pie

Raspberry, chocolate hazelnut and poppyseed rolls

Delicious dessert plate! I hope everybody enjoyed the Easter table for this year, here’s hoping next year we can share with others again.

Town where I lived had Russian restaurant. Very expensive. Went there once and got my first foodgasm. So very good!

4 years ago | Likes 6 Dislikes 0

Fortunately that was still the times, when vendor paid the bill. In 90’s and about $100 per person. Fortune for a young man at the time.

I love poppy seed rolls. The old school ones with lemon juice added.

4 years ago | Likes 7 Dislikes 0

These are from my grandmothers recipe, but the poppyseed filling is Solo pastry filling. It’s more sweet than tart.

4 years ago | Likes 2 Dislikes 0

Well from the looks of it your grandma was an awesome cook and so are you.

4 years ago | Likes 4 Dislikes 0

Thank you

My grandfather was Slovak (Roman Catholic) and we always had kielbasa and Hawaiian sweet rolls on Easter. I'll have to try my hand at paska!

4 years ago | Likes 4 Dislikes 0

Now I know why my neighbor has "Happy Easter" signs in his yard! Thanks.

4 years ago | Likes 4 Dislikes 0

It’s Orthodox Easter. The date isn’t specifically Russian.

4 years ago | Likes 3 Dislikes 0

Never let anyone tell you ham is overdone. Ham is ham. It all looks delicious, OP

Thank you!

4 years ago | Likes 17 Dislikes 1

The lamb is hella overdone. But the ham looks perfect

4 years ago | Likes 5 Dislikes 3

This^^. I think it looked perfect @op. All of it. Need. Now. Especially duck fat potatoes. Yeeesss

4 years ago | Likes 16 Dislikes 1

They were fussy but so worth the effort. Kids inhaled them!

4 years ago | Likes 7 Dislikes 1

But the lamb......so done....

4 years ago | Likes 9 Dislikes 1

That was my first thought. Lamb shouldn't go beyond medium.

4 years ago | Likes 5 Dislikes 0

Yes I’m aware - juggling too many things. Thankfully it was still juicy and very tasty. Can’t get everything right!

Also the Greek one. Your baking is risen as well as Jesus.

4 years ago | Likes 3 Dislikes 0

Those are some beautiful chops. Greek Easter was today as well, we had lamb too but yours looks even more delicious. Happy Easter!

4 years ago | Likes 17 Dislikes 0

Happy Easter to you too my friend, I’m sure you had tons of deliciousness too!

What is it with the downvotes? I'm Satanic, didn't downvote, and found the post delightful. Let people be happy.

4 years ago | Likes 9 Dislikes 0

Eh, internet people be internet people

4 years ago | Likes 3 Dislikes 0

Thank you! Honestly the post is just about food, but unfortunately some people are never happy or satisfied. I appreciate the kind support!

4 years ago | Likes 3 Dislikes 0

Hey, the way I look at it, the sooner we all learn to tolerate others beliefs, the sooner we can move on to more important things.

4 years ago | Likes 4 Dislikes 0

Absolutely! The world is amazing if people give it a chance and look past their own noses

4 years ago | Likes 2 Dislikes 0

Wow, very impressed with the cooking, but even more with the heart and soul you put in this effort. Love this post

4 years ago | Likes 5 Dislikes 0

Thank you!

4 years ago | Likes 1 Dislikes 0

I'm a celiac and can't find a good gluten free paska recipe. Can I please have yours? I miss good baked goods so bad.

4 years ago | Likes 4 Dislikes 0

I merged a couple of online ones, the texture is not what you’d expect (it’s dense), but Google one that has the egg whites made into (1/2)

4 years ago | Likes 1 Dislikes 0

A stiff meringue, I think that was the reason they rose as much as they did. Plus I used cup4cup flour, expensive as hell but good quality

4 years ago | Likes 1 Dislikes 0

I use Cup4Cup too. Thank you!

4 years ago | Likes 2 Dislikes 0

Is the thing on the left squash?

4 years ago | Likes 6 Dislikes 1

Yes - blue Hubbard squash with brown sugar and gingerbread spice, some marshmallows on top. I know it’s sad looking but tasted yummy

4 years ago | Likes 8 Dislikes 1

As a dinner side?

4 years ago | Likes 1 Dislikes 0

Yes, more like using up last of the winter veggies - Hubbard squash are enormous, like 20 lbs each

4 years ago | Likes 2 Dislikes 0

The differences between Catholic and Orthodox Easters are so interesting! I was born in a Catholic country but live in Greece currently 1/2

4 years ago | Likes 4 Dislikes 0

And I can say right away Orthodox followers take Easter much more seriously than Catholics. We have holy Friday and Easter Sunday but in 2/3

4 years ago | Likes 4 Dislikes 0

Greece they get like 4 or 5 days, lots of fireworks and smoke curtains everywhere. It’s fascinating. I really liked your pictures. 3/3

4 years ago | Likes 3 Dislikes 0

Thank you so much! In the US my friends just roll with it at this point (cause I feed them too), but there is a difference in celebrations

4 years ago | Likes 3 Dislikes 0

All of that looks absolutely amazing, but I couldn't help giggling like a small kid :) In finnish paska means shit !

4 years ago | Likes 11 Dislikes 0

Ha! Didn’t know that! Thanks for the laugh too!

4 years ago | Likes 7 Dislikes 0

I think the russian orthodox here call that bread "kulitsa". It's a bit similar to the italian panettone?

4 years ago | Likes 3 Dislikes 0

Yup! There’s lot of variability. My relatives were very poor, so ours isn’t made with dried fruits/frosting - but lots of other recipes do

4 years ago | Likes 2 Dislikes 0

As a chef, that looks amazing. So much heart in your food... So do you live anywhere near Brisbane?

4 years ago | Likes 31 Dislikes 1

Sorry - New England, United States, a bit far to share!

4 years ago | Likes 16 Dislikes 0

I too wish this feast was in Brisbane!

4 years ago | Likes 2 Dislikes 0

I'm in Yeerongpilly...any thoughts where I could get those wafer sheets? I'll make that & you do the rest? ?

4 years ago | Likes 4 Dislikes 0

Look for a Slavic shop? It’s hard to get products in the US, I go to Polish, Ukrainian and Russian specialty shops to pick out ingredients

4 years ago | Likes 2 Dislikes 0

I’m in ascot, maybe with the power of 2 we could make something a fraction as good as this ?

4 years ago | Likes 2 Dislikes 0

You can get them at woollies, just look for the ice-cream wafers

4 years ago | Likes 1 Dislikes 0

The chops should have some pink to them, but overall FANTASTIC!

4 years ago | Likes 3 Dislikes 0

I know - they got a touch past ideal but we’re still juicy and yummy. I was juggling too much and you can see the result of it

4 years ago | Likes 4 Dislikes 0

OK, I thought you were one of those that hate the pink. I know they were delicious as I have overcooked a rack once, still good.

4 years ago | Likes 1 Dislikes 0

Goodness no. One of life’s greatest pleasures is a medium cooked, dry aged ribeye steak…

4 years ago | Likes 2 Dislikes 0

That looks amazing! Can I invite myself to your celebration next year? I promise to help with the cooking and cleanup!

4 years ago | Likes 153 Dislikes 1

I promise to solely help with eating and drinking

4 years ago | Likes 7 Dislikes 1

I cannot wait to be able to host again, we’re taking covid very seriously here due to vulnerable family. I wanna feed people!

4 years ago | Likes 63 Dislikes 1

I like being fed! I will also help with cooking and clean up when it is safe!

4 years ago | Likes 2 Dislikes 0

Looks really good. Greetings to slavs brothers n sisters from Croatia and happy easter.

4 years ago | Likes 5 Dislikes 0

Good on you, respect.

4 years ago | Likes 11 Dislikes 0

Show how you made the cheese, please.

4 years ago | Likes 6 Dislikes 1

The farmers cheese? It’s very simple - bring milk to a boil, add lemon juice, move off the heat and let sit 5 mins. Curd will form. (1/2)

4 years ago | Likes 13 Dislikes 1

Don’t laugh, but strain through a cheap knee high stocking (brand new and rinsed in hot water). Tie the stocking right over a spoon (2/3)

4 years ago | Likes 12 Dislikes 1

And hang spoon over pot to let drain. After it’s drained a couple hours put under a weight (I used the cans of chicken broth) in the (3/4)

4 years ago | Likes 11 Dislikes 1

Fridge overnight. Next morning cut off the stocking and I mold on a plate!

4 years ago | Likes 10 Dislikes 0

Wow, Thanks. I love cheese. I never new it could be so simple. Have a bunch of upvotes, ++++1

4 years ago | Likes 2 Dislikes 0

Bumblebee tuna back at ya!

How strictly do Orthodox follow the Wed-Friday fasting and fasting before communion thing? Do most people go to Vespers?

4 years ago | Likes 4 Dislikes 0

Like most church activities there’s “by the books” and then there’s reality. You do what you can, all are welcome no matter what.

4 years ago | Likes 2 Dislikes 0

For example I fast before communion, but only my older children do. We do vespers rarely as church is far away, but aim for weekly liturgy

4 years ago | Likes 2 Dislikes 0

Vaistinu vaskrse :)

4 years ago | Likes 13 Dislikes 1

wowowowowow, rusian dude! pasca with nothing inside?

4 years ago | Likes 6 Dislikes 0

It can have something inside?!? Do tell!

4 years ago | Likes 2 Dislikes 0

yeah, in romania, pasca is made with cheese and raisins (optional to some)

4 years ago | Likes 1 Dislikes 0

That’s interesting! Someone commented its plain - my relatives never did dried fruit/frosting, so I don’t. I could play with it next year!

4 years ago | Likes 1 Dislikes 0

yeah, it's moldavian pasca :D try it, it's great

4 years ago | Likes 2 Dislikes 0

Hristos Anesti! (I may have butchered that spelling, only used to singing it in church, sorry if I did)

4 years ago | Likes 29 Dislikes 1

Same here, and also at dinner. The reply is like vaistinu vaskres for us. Bit hope you were able to celebrate in a safe and enjoyable way.

4 years ago | Likes 12 Dislikes 1

Sounds like the Greek Orthodox Easter greeting.

4 years ago | Likes 4 Dislikes 0

We go through a list of like 30 languages, it gets confusing after the first 5-10

4 years ago | Likes 2 Dislikes 0

Hristos a inviat !

4 years ago | Likes 10 Dislikes 0

adevarat a-nviat! ai mai vazut pana acum oasca fara branza?

4 years ago | Likes 4 Dislikes 0

pasca*

4 years ago | Likes 2 Dislikes 0

Nu, nici nu am auzit. In poza arata mai mult ca panettone, pasca cum o stiu eu seamana cu o placinta.

4 years ago | Likes 1 Dislikes 0

oarecum, da. zici de pasca fara aluat tu

4 years ago | Likes 1 Dislikes 0

Nu stiu de pasca fara aluat. Pasca care o stiu eu are aluat la baza si margine
