I told all my friends about it too but sadly the place sold to new management shortly after ICE came to town and is now shut down :(

I'm with you. Only a few dishes and a salty white crumbly cheese can be good, but if it's like street tacos or something? Blasphemy. Not even just on principle, but it literally tastes worse with it

I suppose it would be pretty hard to find a substitute that would keep the same flavor. Just omitting it entirely would not change the way the meal is prepared, however. In a pinch, I think just plain butter could work as a substitute.
A lot of the street taco vendors in Mexico have ones that pop up instead of down and they do a final sear on the near on the dome as well as heat up the tortillas. It's amazing especially for birria.
