Why not just use tongs or a spatula to scoop? Wouldn’t that be more sanitary?

I ordered alambres at my local Mexican place off the “authentic” page on the menu and I was in love instantly. It was served on top of 4 corn tortillas and had a side of the tastiest spicy tomatillo salsa. The bacon was big and chunky as were the peppers and onions and chicken was delish. I order it once s month now and I think the shrimp version is my favorite. I told all my friends about it too but sadly the place sold to new management shortly after ICE came to town and is now shut down :(

I just had that, but it was made pizza style with the tortillas on the bottom and used carnitas. Yummy!

Mexican is all about the peppers and spices and how it pairs with the meat.

If using cheese, omit the meat and just go veggie, much better flavor experience that way.

Oh, then NOT BLASPHEMY!! And while bacon fat is indeed an excellent seasoning in its own, it is not the only one. I suppose it would be pretty hard to find a substitute that would keep the same flavor. Just omitting it entirely would not change the way the meal is prepared, however. In a pinch, I think just plain butter could work as a substitute.

Can't move stuff up to the side in a regular wok but a bowl works just fine

The cooking heat is in the middle of a wok.
The food pushed up the walls is kept warm.
However, you can remove food from the wok to make room.

A lot of the street taco vendors in Mexico have ones that pop up instead of down and they do a final sear on the near on the dome as well as heat up the tortillas. It's amazing especially for birria.
