Start by sprinkling gelatin in water and give a quick stir. This is after it sets. Smells a bit like burned hair at this point. That won't carry through to the final product. 6 pkgs in 1 C water.
Rinsed and patted dry some fresh lavender to flavor the syrup.
The syrup. 3 cups sugar, 2 cups light corn syrup, 1 cup water, couple pinches of salt.
Heat to 240° F or the 'soft ball' stage.
Mix slowly with the gelatin. Beat the ever living shit out of it. It will about double in volume, so make sure you have a big enough bowl, I almost ran out of space! This is also where I added vanilla and color. 1 tsp vanilla, and 'pretty purple' from the back of a McCormick color kit.
Brush pan and sides with veggie our an sprinkle liberally with powdered sugar before pouring.
I couldn't mix anymore without overflowing my bowl, but I kinda like the uneven striations!
Cure over night, do not cover or enclose. More sugar. Peel away from sides and then out of the bottom. Slice in cubes or use a sharp cookie cutter to shape.
More sugar to keep the sides from sticking.
Depending on your shape, there is a fair amount of waste. I made a double batch, expecting this. More for leftover for me!
Over a small pot of water, get a bowl with desired chocolate and boil till chocolate melts smoothly. This is 60% dark. Mmm.
Er mah gerd!
Cat tax.
This is kinda a repost of my earlier post a couple days ago, because I realized I left, like, everything out. Recipe I used http://www.epicurious.com/recipes/food/views/homemade-marshmallows-51152000

Ooo. Thank you! Favorited for later uses.
carlthecad
Those look amazing. I make root beer marshmallows at home. So good.
IIPhoenixII
I would have just kept it as one giant marshmallow, smother it in chocolate and took bites outta it.
keppay
I never realized how much work it takes to make marshmallows
MenagerieManager
It's not so bad, I did a bunch of foofy stuff to make it harder, stars instead of cut square, custom sized cooling plate instead of 9x13...
whyteraven74
Are we just going to ignore the Hello Kitty toaster?
AssamLaksa
Now, make marshmallow fondue!
MenagerieManager
I was thinking about it! Mmmm
bluhu
I have the same hello kitty toaster!!
CmdrZellgaudis
Why did you add water to the sugar for the syrup mix? The sugar and corn syrup melt naturally and boil out the water anyway.
MenagerieManager
I don't do it super often, so I just suck to the recipe :)
TheLetterKay
I would just chop up the leftovers into bits and keep in a jar for adding to hit cocoa
MenagerieManager
Yup!
Idontknowwatiexpected
More sugar Janice, more!
Mambacandy
Ahhhhhhhh we have the same toaster! Also, badass marshmallows!
myusernameisunimportant
Moar sugar!
darthbiscuit
Bag of marshmallows is like, a buck fiddy. You can even get them in different shapes and flavors and shit. Why you do this? Too much effort
MenagerieManager
Because I'm a masochist. And bragging rights.
peggingismycardio
Made them once a few years ago. Couldn't stop gagging over the gelatin/water mix (smelled like stinky wet dog to me)!
GayBacon
Because it's gross ass hooves and shit.
kiwiflavored
You wouldn't have liked working in the porn industry back when they used fake sperm for the money shot
peggingismycardio
Well that and my aversion to contracting herpagonosyphiaids...
MenagerieManager
Yeah, it's awful if you take a deep whif. I feel like Knox is better than some, and it does go away!
shreddedking
is there any "vegetarian" option in gelatin? nice post by the way. +1
MenagerieManager
There is also a vegetarian gelatin called 'genutine' that I've run across
SecondHandDeathWish
Pectin is what my vegan mother uses. Or used. I think.
Horsed
Can't say for marshmallows but there are several options (like kosher haribo) with products from algae (alginat, agar-agar)
jeni414
you need a stand mixer :o
MenagerieManager
I do! Really, I want Alton Brown's KitchenAid...
Kinozza
The only thing to ruin this for me is the Lavender. It always tastes like it should be used to clean the toilet not for general consumption.
MenagerieManager
Haha! Sometimes! It can be well done, especially if you find the right variety.
IsACouchASeat
Totally agree. Laundry smell or bathroom smell, not food smell.
robpot
Those look delicious!!
itsamazing
For the Europeans, use glucose
SteelMakesMeHard
So much wasted marshmallow..
MenagerieManager
Not wasted, just not pretty enough to give away ;)
SamTak
I would rather buy a bag of jiffy marshmallows
kanybal
This post made me realize how unhealthy they are anyway, so why bother make them :o
MenagerieManager
But by volume they're only 50% sugar...
kanybal
Honestly it's the gelatin and corn-syrup that bother me. But great job anyway!
MenagerieManager
Lol can't blame you! Bit less tasty. TONS less clean up!
thedeafbarista
What variety of culinary lavender are you using? I always find Augustus folia too...weak in flavour
MenagerieManager
It did come out mild. I couldn't find the extract or essential oil, so I grabbed the whole plant from trader Joe's :(
ProfBlastoff
Alton Brown would be proud
deluxury
OR...or...just sit on the couch and eat fluff out of the jar.
rainbowarhead
I used to make small batch candies and chocolates, two hints: use 1c honey and 1/2c water instead of standard syrup for a fun twist. (1/2)
rainbowarhead
Also, use corn starch instead of powdered sugar. If the sugar gets wet, the entire marshmallow will get sticky af. Dust off thoroughly!
MenagerieManager
Thanks!
rainbowarhead
NP! Also the star cookie cutter is 100% adorable. I wish I'd thought of it! (;
ButIThinkItLooksOK
That is neat. Why pat dry the lavender though if you're just going to add it back to the liquid?
MenagerieManager
In case there was any grit still stuck to it after the rinse :) I wanted extract, but all I could find is a bush...
ButIThinkItLooksOK
Oh.. makes sense. Would make a comment about user sub and only finding bush, but that just seems to easy.
igiveyoutheGIFtofIRRELEVANCE
MenagerieManager
Indeed you do, sir or madam!
igiveyoutheGIFtofIRRELEVANCE
Immf
It's never once crossed my mind to make marshmallows at home, neat post.
mythbird
Whatever you do don't use a hand whisk...as a poor Uni student I did, didn't quite work out, ended up like a very large flat gummy worm
Primaltiguere
I thought they grew on trees in the woods.
willfullyspooning
They're 10000% better than store bought! I make mine with peppermint or coconut extract!
MenagerieManager
Thanks! It's a mess and a half, but fun! You can put almost any flavor in, and get to bask in an unjust glow of snobbery, because it's actua
Teretenek
I made peppermint marshmallows one time just so I could have them in hot chocolate. Best. Decision. Ever.
Septcanmat
Make cookies at the same time. Don't cure the marshmallow completely. Cut it out and make cookie-marshmallow sandwiches. Finish cure. Enjoy.
MenagerieManager
Dammit you are brilliant. I did make cookies but am not as smart!
Septcanmat
MenagerieManager
LLY really simple, but seems like a complete mystery to most ;)
AbyssinianRem
What are other flavors one can add themselves that you'd recommend? I'm allergic to lavender... '-.-
MenagerieManager
Almost anything! Toss in some dessert spices like cinnamon or clove, citrus extract, a good crafts store will have a baking section with
MenagerieManager
All kinds of flavor extract. It's pretty forgiving, so add what you like! Just put it in with the vanilla towards the end while mixing.
AbyssinianRem
Thank you so much!
Rinsie
...I'm assuming that pkgs indicate some kind of weight, and C some kind of volume, but... what?!?
MenagerieManager
Knox brand gelatin comes in .25 oz packets in a 4 pack box.
Rinsie
I'm sorry, I'm not from the US but from Europe, and I don't really know these units :P
MenagerieManager
Sorry, oz. is for some reason short for ounce, so .25 oz. Equates to about 7 grams, according to the googles.
Rinsie
ok thanks! I also don't know what pkgs means, and 1 C of water? I'm confused...
MenagerieManager
Pkgs is my own abbreviation of packages, and a C, or cup, is 240 mL. Prolly why a lot of our recipes include 'as needed' instructions, as
