Start by sprinkling gelatin in water and give a quick stir. This is after it sets. Smells a bit like burned hair at this point. That won't carry through to the final product. 6 pkgs in 1 C water.

Rinsed and patted dry some fresh lavender to flavor the syrup.

The syrup. 3 cups sugar, 2 cups light corn syrup, 1 cup water, couple pinches of salt.

Heat to 240° F or the 'soft ball' stage.

Mix slowly with the gelatin. Beat the ever living shit out of it. It will about double in volume, so make sure you have a big enough bowl, I almost ran out of space! This is also where I added vanilla and color. 1 tsp vanilla, and 'pretty purple' from the back of a McCormick color kit.

Brush pan and sides with veggie our an sprinkle liberally with powdered sugar before pouring.

I couldn't mix anymore without overflowing my bowl, but I kinda like the uneven striations!

Cure over night, do not cover or enclose. More sugar. Peel away from sides and then out of the bottom. Slice in cubes or use a sharp cookie cutter to shape.

More sugar to keep the sides from sticking.

Depending on your shape, there is a fair amount of waste. I made a double batch, expecting this. More for leftover for me!

Over a small pot of water, get a bowl with desired chocolate and boil till chocolate melts smoothly. This is 60% dark. Mmm.

Why did you add water to the sugar for the syrup mix? The sugar and corn syrup melt naturally and boil out the water anyway.

Can't say for marshmallows but there are several options (like kosher haribo) with products from algae (alginat, agar-agar)

The only thing to ruin this for me is the Lavender. It always tastes like it should be used to clean the toilet not for general consumption.

It did come out mild. I couldn't find the extract or essential oil, so I grabbed the whole plant from trader Joe's :(

I used to make small batch candies and chocolates, two hints: use 1c honey and 1/2c water instead of standard syrup for a fun twist. (1/2)

Also, use corn starch instead of powdered sugar. If the sugar gets wet, the entire marshmallow will get sticky af. Dust off thoroughly!

Make cookies at the same time. Don't cure the marshmallow completely. Cut it out and make cookie-marshmallow sandwiches. Finish cure. Enjoy.

All kinds of flavor extract. It's pretty forgiving, so add what you like! Just put it in with the vanilla towards the end while mixing.

Sorry, oz. is for some reason short for ounce, so .25 oz. Equates to about 7 grams, according to the googles.
