Preview of Cherry Phyllo Pie

Ingredients
* 12 sheets - Phyllo Pastry
* Caster Sugar - 1.5 Cups (300g)
* Vanillin - 1 tsp - 5g
* Pitted Dark Cherries - 12 oz (340g)
Preheat the oven to 355*F (200*C)
Rinse the cherries and spread out on paper towels to dry.
While drying, combine the vanillin and sugar in a mixing bowl.
Combine 1/3 Cup of the vanilla sugar and cherries. Let rest for 5-10 minutes.
Stack 3 sheets of filo with 1 tsp of vanilla sugar between each sheet.
Lay out an even layer of cherries onto the phyllo stack.
Roll tightly to enclose the cherry filling.
Brush the roll with a light coating of olive oil.
Bake on a sheet tray for 35-40 minutes or until golden brown.
Once removed from the oven, let rest for 15 minutes before serving. Dust with powdered sugar to serve.
Finished Product:
All things considered, we decided to go with a traditional preparation against our better judgment. This dish was lacking quite a bit. The overall flavor was 2 note, in that the filling is sweet from the cherries and vanilla sugar and flaky from the phyllo.
If we were to make this again, we would butter each layer of phyllo, similar to baklava, as well as introduce of some sort of citrus to brighten up the filling.

Nobody willingly makes homemade phyllo* dough. Restaurants will not use house made phyllo* dough. It's a total pain in the ass.

That's likely true but...I still wanted to see it. There's a pizza I've been craving for a couple decades.
