There IS a proper way to cook well done so it's not tough and gross. It just takes a little more time, and nobody seems to want to.

It depends on the cut. Tender cuts get dry when cooked well done, tough cuts gets more tender (because of breakdown of collagen).

That's also true. The other issue is normal steaks need the sear on the outside, so higher heat is used to cook that fast.

I have a few mates who are dairy farmers and they will not eat beef that is pink in the middle. Reason - under cooked beef can make you sick
