My biggest tip for roasting garlic: use your toaster oven! You don't need to heat up your entire oven for a few heads of garlic.

I have done this. IMHO not worth. Time, effort, getting the garlic out of bulb leaves lots behind and/or messy + final taste is too mild.

I imagine garlic has some nutrients but in a western diet, vitamins aren't usually rare enough to need consideration unless vegetarian etc
