Ceramic clay doesn't change in pliability across normal temperature ranges. If it started frozen then it's fucked and unusable anyway, if it's hot enough to sinter you're not surviving that.
It's probably an illusion from how wet or dry the surface is. He is making handles for cups and you do that by slowly pulling the clay with wet hands to draw a long slender shape to make to a handle
It's not stiffening, maybe it just looks like that in the video. It's becoming more pliable mainly because he's making it thinner and wetter; any increase in temperature would be very minor since the whole process isn't much longer than what we're seeing here.
