Soybeans need to be harvested at a very specific moisture content. Too wet and they have to be dried before they can be stored, adding to the cost. Green stems also make the combine harvester have to run slower and use more fuel.
Too dry and they shatter, leading to big losses.
So if they can’t get the workers in to harvest multiple fields at once, the soybeans will dry out before they can be harvested and the yields will be far lower.
