Super easy dish to make and it tasted amazing, the saffron is a really great combination with the seafood and the sausage. Easily one of the best dishes I've ever had.
New 18" wok
Chicken
Olive oil in the wok
Chicken in the wok
1 chopped onion, garlic cloves, and the recipe said to use chorizo but we decided to go with hot Italian sausage
Move the chicken to the side and cook the onion, garlic, and ausages until it juices up
Mix in the chicken once more
Add 2.25 cups of rice and let it soak up the juice. Stir it around for about a minute or two
Time to use the saffron, this stuff is not cheap
Just a pinch should do it
Mix in the saffron, 6 cups of chicken stock and 3/4 cup of chopped up san Marzano tomatoes. Bring to a boil, cover, and reduce heat. Let cook for 15 minutes.
The seafood we used: the scallops were awesome
Some fresh, unpeeled, gulf shrimp
Clams
Lobster tail
Easier to eat when you cut it in half
Parsley
After 15 minutes the rice absorbs the stock and takes on a very nice yellow color from the saffron.
Arrange your seafood, cover, and cook for another 10 minutes
Voila!
Add in the parsley, stir it up on high heat to let the rice brown a bit. Remove from heat and serve

Whenever I make jambalaya or gumbo and it asks for Italian or Andouille sause, I use chorizo. Were like opposite twinzies!

I need to see much more toasty brown color on that rice, that's best part. Bet it is still delicious.

My mom subs Saffron with equal amount of turmeric. Not sure if it would screw with the flavors though

Turmeric actually has more vitamins and stuff, but a bit lemony of a flavor
